yummy soup!

i have one of the sweetest neighbors anyone could ask for! she also happens to be my visiting teaching companion. i want to be as close to her as possible when she gets beamed up, cuz i am going to be holding tight to her apron strings! one day about two weeks ago, she came by, and said that she was sorry that she hadn't gotten over here for christmas, and in her hands had a box full of all of the ingredients and recipe for queso soup and said, "here, have dinner on us tonight". it was so yummy, that i just have to share the recipe with you. plus it's super easy to make! which is a big plus in my book!

queso soup

2 1/2 cups cooked and shredded chicken
1 can drained (or a couple of handfuls of frozen) corn
1 can cream of chicken soup
1 - 4oz. can diced green chilies
2 TBSP. snipped cilantro
1 can pinto beans (optional) ~ but i would recommend!
1 pkg. Taco seasoning
Mix altogether in crock pot
Add:
3 cups chicken broth
Cook on low (6-8 hrs) or high (4-6 hrs)
Last 30 minutes Add:
6 oz. Velveeta cheese
3/4 cup sour cream

i served it with this cornbread recipe that i got from my daughter
(tastes like the good ol' cornbread that you get at marie calendars)

cornbread

1/2 of a yellow cake mix> mix as directed for 1/2 cake** but still using 2 eggs
1 box of "jiffy cornbread mix"> mix as directed **
**substitute ALL water for milk!
bake according to cake directions
makes 1 - 9X13 pan

Thanks for the recipe. I love to try new things. I just made Clam chowder for the first time today.
